Adium Mac native chat client. Talks to AIM, Yahoo, Google, pretty much everything
Cyberduck FTP, SFTP native Mac client.
Firefox The best web browser in the world.
Thunderbird Best mail client in the world.

Development

Komodo Editor The free version of Active State's full featured Komodo IDE.
NetBeans Programmer's IDE for Java, PHP, Ruby or Python. Written in Java.
Smultron Mac native programmer's editor. The only free and open source one out there.
